Birthday Pancake!


It's my birthday today! I've been living now for several decades but I still have a childish glee on the day. I never have felt that I'm getting 'old' - on my birthday, anyway. OK, up until 5-6 years ago I could go mountain-biking for a couple of hours. I don't think I could do that now. Having said that, I'm fairly fit, given the fact that I've had three operations (cancer, kidney cyst, broken leg) for the last 18 months.


As I've talked about it here, since my last ski accident 10 months ago I've been seeing a physio to get my fitness back on track. A good physio makes a huge difference, but as any other things, no matter how good the guidance is it would make no difference if you don't follow it and work hard. It's not like I am a very motivated person in doing anything. I work hard only if I have a good reason to do so and if I have a rational explanation in my head. Then I decide and just focus. At least I can trust my judgement at this age...

I had this pancake for my birthday breakfast just to celebrate another step up the ladder.

Ingredients (for about 3-4 people):
140g flour
tablespoon of baking powder
pinch of salt
40g sugar
2 eggs
100ml sour cream
100ml milk
20g butter, melted

Sift flour and baking powder from high into a largish bowl. Add salt and sugar and mix. In a separate bowl beat the eggs and add the melted butter, sour cream, and milk. Pour the dry ingredients into the flour and fold everything together gently.

Heat a largish non-stick frying pan. When the pan is hot enough, scoop about a tablespoon of the batter into the pan for one pancake. We eat these with maple syrup.
